Gooseberries Galore

Towards the end of June our gooseberries were ready to be picked. We picked about 40 cups from our one little bush! This was a good year for gooseberries. For those of you who haven’t had the pleasure of trying them before, they are very tart and very delicious when sweetened. Honey compliments them perfectly. We cooked most of them with honey and tapioca and froze the mixture for later use. We used some fresh gooseberries to make cookies and a custard, which were both delicious. Apparently gooseberries are quite loved in Britain because when I looked online for gooseberry recipes the majority are from Britain.

Cookies filled with gooseberry goodness! Ok, so they look a little funny, but they were gooood!
